Apricot Wine

This is a rich and full of flavour wine that was made from a combination of fresh and dried apricots slowly fermented to bring out their flavours.

Once fermentation was complete, the wine was racked onto more dried apricots where it managed to confiscate a whole range of flavours from those dried fruits. This flavour is further enhanced with the addition of Vanilla beans.

Fortified with a smooth brandy, it is now resting in a nice old French Oak ageing barrel. I am expecting a lush desert style wine to emerge at the end of this journey.

Having not made this before, I have no idea how long it will need to age for, I am happy to be patient.

I will also be working on some lighter summer wine style wines the next time the Apricot season comes around.
